Striped Poached Pear in Crème Anglaise
Recipe by: Fae’s Twist & Tango (fae-magazine.com)
• one-half recipe crème anglaise
• 4 firm pears of choice… or to stripe it as seen in the photo, red varieties
i.e. red anjou, starkrimson or red bartlett are suggested
• 2 cups water
• 2 Tbsp granulated sugar
• 2 tsp lemon juice
• ½ tsp pure vanilla extract
• 2 Tbsp roasted, unsalted, crushed pistachios
DIRECTIONS
◊ With the tip of a small, sharp, knife, mark the pears with the stripes as seen in the photo or image of choice, i.e. mark heart(s) and peel around it/them. Core the pear from the bottom, very carefully. First, cut-out a shallow cone and remove. Then dig in and take out the core with a serrated grapefruit spoon,
◊ In a large, oven-safe bowl, add water, sugar, lemon juice, vanilla and in the microwave oven, bring to a boil .
◊ Place the pears in the bowl, cover with wrap and microwave for 3 minutes, on high. Turn the pears over and microwave for 1½ more minutes. Take them out of the syrup and stand them on a plate. Put the plate in the refrigerator (it will cook more as cooling). Note: If the raw pears are not firm, less time is needed for poaching.
◊ When ready to serve, pour ¼ of the crème anglaise into each shallow dessert dish. Place a pear on each and sprinkle with pistachio bits.
